Dishwashing detergent or washing up liquid are made up of molecules and are surfactants which have the hydrophilic head means it is appealed to water.The hydrophilic tail means it is appealed to oil and grease .These molecules form the small balls and is known as micelles. In micelles, the hydrophilic heads develop the ball surface.First the micelles form and restructure itself, lipophilic tails grip on to the grease and separate it from the surface of the plat results dish being washed.This makes easier to remove the grease as compare to the syrup.The reason of using hot water is that the detergent components become more soluble in high water temperature and heat partly helps to melt off the grease and fats .
Water is considered as the universal solvent which implies many of the substances easily dissolve in water.The substance that easily dissolve in it are considered as the hydrophilic.Hydrophilic substances are stronger as compare to the cohesive force of water.That is the reason , sugar and salt are easily dissolve in water as both are polar in nature. The substance that do not dissolve in water are considered as the hydrophobic.That is the reason , oil do not dissolve in water.Water is very poor solvent for the hydrophobic molecules example: lipid, fats etc.When non polar molecules interacts with water, it changes the pattern of hydrogen bonding and hydrophobic molecules present around the water produce the cage structure known as clathrate.The change in pattern of hydrogen bonding results the overall entrophy of the system
